Zucchini: The Holy Grail of Weight Loss?

For those like myself who are looking to shed pounds all summer ’16 and get back in shape, before you start another fad diet or  calorie-counting frenzy, add zucchini to your grocery list. 

I am not sure exactly what components a zucchini is composed of in relation to weight loss, all I know is since I’ve been adding them into my daily diet the weight has been peeling off! No matter if I boil, bake or shred in a smoothie, this summer squash has helped me move past my dreaded weight loss plateau.

Zucchini Shrimp Scampi

Traditional shrimp scampi made into a low-carb dish with zucchini noodles. It’s unbelievably easy, quick & healthy! 214.3 calories.
2 tablespoons unsalted butter

1 pound medium shrimp, peeled and deveined

3 cloves garlic, minced

1/2 teaspoon red pepper flakes, or more, to taste

1/4 cup chicken stock

Juice of 1 lemon

Kosher salt and freshly ground black pepper, to taste

1 1/2 pounds (4 medium-sized) zucchini, spiralized

2 tablespoons freshly grated Parmesan

2 tablespoons chopped fresh parsley leaves
